Celebrate Easter with these fun and bright cupcakes using the Wilton Color Right Performance Color System. These are super simple to make and can be done in an afternoon with your kids. You don’t need any special skills or experience with piping icing, you just need the right tools and a willingness to give it a go. I’d never piped grass before making these cupcakes and it was so easy to do. The Little Man even had a go at it, admittedly he ate more than he piped but he still had fun!

If Easter is not your thing to celebrate you can use the grass with some candy daisies to make them spring themed. I made them in a mix of sizes so that adults and children could share in the yummy. The Little Man is a little bit dinosaur obsessed so these weren’t Easter Eggs they were dinosaur eggs (which I’ve filed away to use for his upcoming dinosaur themed birthday party!). All the supplies I used to make these cupcakes I was able to pick up from Spotlight which was super handy as it also gave me an “excuse” to check out fabrics!

Recipe for Buttercream Frosting
- 125g butter
- 1½ cups of icing sugar mixture
- 1 tbsp milk
- Wilton Color Right Performance Color System – dye to your preferred colour
- Wilton Treatology Flavour Kit – flavour as you like
1. Cream butter with an electric mixer until smooth. ( (C) This is the mixer that I have and adore – it handles cold butter like a champ!)
2. Add icing sugar mixture in batches until well combined with the butter. (Make sure to turn the mixer off if you don’t want to be covered in icing sugar powder!)
3. Add milk and Wilton Color Right Performance Color System dyes. Mix until colours are well combined and to desired colour.
Note: I made double the mixture to ensure I had enough to practice my piping and cover all the cupcakes generously.

How to Make Easter Cupcakes
1. Bake 1 dozen cupcakes as per your favourite cupcake recipe or using a packet cake mix. Let them cool before icing.
2. Using the Small Icing Knife/Spatula put a thin layer of the buttercream frosting over the top of the cupcakes. (This helps disguise any holes you might get when piping your grass.)
3. Assemble the decorating tip and piping bag as per the instructions. Partially fill the piping bag with buttercream frosting. (Don’t be tempted to over fill the bag, you don’t want frosting coming out of both ends!)
4. Practice your “grass” piping on a cutting board or plate before piping your cupcakes. If you’ve never piped grass before (and I hadn’t before making these cupcakes) then check out this video from Wilton that will show you how easy it is.
I found it easiest to start on the outside of the cupcake, pipe grass along the a portion of the edge, and then move into the middle and across to the other side. I also tried to vary the lengths and direction of the grass to give it more of a “natural” look.
5. Decorate the cupcakes with easter eggs, sprinkles and candies to form little Easter inspired scenes.
6. EAT THEM ALL!
